Pappada vada …a typical keralite snack for tea time or nalumani palaharam

  I am goint to tell you about a snack which is easy to make within five minutes of time.Its the snack from gods own country Kerala the place where I come.People make it in a large batch and store in air tight container it’s a wonderful muchkin for tea .it brings nostalgic feeling when I write about it.aIts called nallumani palaharam or te time snack

INGRIDENTS

Urad dal papad/kerala papadam-12 nos
Coconut oil-1 cup
raw rice flour-1/2 cup
asfetida –2 pinches
Chili powder-1tspn
Turmeric—1tspn
Salt-according
 black sesame seed-1tspn
Cumin-1 tspn
Water –(to mix the batter)
Gram flour-!/2 cup

METHODS
Keep a pan of oil in a pan and heat till it fumes. Mix for the batter take rice flour, gram flour, cumin, black seed salt,chilly, turmeric, and asafetida .It will be better if  gramflour sifted,it won’t form any lumps.Add water .Mix into batter consistency then dip each papad and fry it oil .take paper towel drain excess oil and serve hot or store in air tight jar.

Pazhampori/ Banana fritters

Nobody can eat just one it absolutely goes well with this recipe  of Banana fritters fried deeply into oil. Its again a snack that belong to Gods own country"Kerala".Its goes very well with evening tea time snack remember my mother make a big batch and within a batch it finishes off. If you go to road side eateries in Kerala you can see a very big long banana fritters
Ingridents
Nendram pazham = 4 nos
Maida=1/2 cup
Water=according
Sugar=1tspn (if banana is too sweet not required)
Salt =according
Turmeric powder-a pinch
Oil for = fry



Methods
Peel off banana cut into two horizontally then slit into vertically four pieces. Make the batter by mixing maida, sugar, water, salt and turmeric.dip banana into batter and fry in oil. once done take it out and pat dry in tissue and serve hot.

cheesy eggless savoury muffin

Tradionally it’s a English breakfast and when you have sudden guest for tea you probably be thinking what to make for snack . If you find cheese lying in the pantry which makes awesome snack to attract kids.There is a great correlation between cheese and kids.Here is one kind of snack which makes your tea party great.

 Ingridents
2 cups  All-purpose flour
1 cup  American corn
2 tbsp  Spring onions
 2 tbsp  Olive oil
1 cup Grated cheese
 1 cup Milk
1/2 tsp  Baking powder
 1/2 tsp Baking soda
Salt 1/2 tsp
 Pepper powder
1/4 tsp  Cumin powder
1/2 tspn Oregano



Methods
Preheat the oven  and grease the muffin mould.
Mix together the all-purpose flour, yellow corn, pepper powder, cumin powder,oregano, salt, baking powder and baking soda.Add the grated cheese, oregano, spring onions to the dry ingredients, gradually add the olive oil and turn into a crumbly mixture.Slowly add the milk and mix well until you get a thick batter.Pour the batter into the muffin mould, arrange the muffin pan in the middle rack of the oven and bake for 15-20 minutes until the muffins turn golden brown insert a skewer if its done it  comes out clean.Serve warm with any salad or soup.

Carrot almond ginger soup "Monsoon delicacy"

 It was a rainy sunday  afternoon  after breakfast, I didn’t feel like cooking lunch or it should be a brunch in that case we need something to fill your tummy with yummy light weight food .and no mood to cook at all then i came up with an idea of "soup" when searched fridge I got two items those were ginger and carrot and some leftover bread pieces made carrot ginger soup to add extra zing i added blanched almonds.
 Ingredients
Carrots – 4 Medium sized
Grated Ginger – 1 tbsp
Almonds – 6 to 8 + 4 for garnishing
Onion – 1 small
cinnamon – 1 tsp
Black Pepper Powder – ½ tsp
Butter – 1 tsp
Salt to taste
Fresh coriander leaves/parsely – few sprigs
toasted bread crutons-1/2 cup
veg stock-3 cup






Method
wash the carrot and chop them nicely in a pan add butter when it melts add onion ginger saute well(onion get tranlucent) then add chopped carrot saute well till all cooks well in butter add veg stock add salt and blanched almond ,simmer the stove once nicely comes to boil add cinnamon and pepper.take off from the stove when cools down blend well in blender ,toast the croutons in butter add chopped almonds and garnish with parsely/coriander serve hot.

Strawberry.....who doesnt love it.....

It was the season of strawberry.We get plenty of strawberry every nook and corner of the city.There is seasonal fresh strawberry juice ,salad, cream cheese cake, jam what all things can be made is available.I thought of making again eggless strawbery cake with strawberry syrup(home made)

 Ingredients 
Strawberry-1 cup diced 
all purpose flour-1 1/2 cup
condense milk -3/4 cup
lemon-1/2
milk-1/2 cup
butter-1/2 cup (room temperature)
salt -a pinch
granulated sugar-1 tbsp
strawberry essence-1tspn
colour -a pinch(rose)(optional)
baking soda -1/2tspn
baking powder-1/2tspn
Method
In a bowl (dry ingredient)add all purpose flour baking soda and powder ,salt .sift for 2 times as baking powder  and soda spread well throughout.In another microwave container mix milk lemon butter keep it in microwave for 1 minute high degree. take it out and add condense milk granulated sugar essence and color mix thoroughly add chopped or diced strawberry.to this mixture add dry ingredients slowly and mix in cut and half fold method.grease the baking pan if its is cup cake.Arrange paper cup in mold or in silicon tray .pour the batter and tap the tray so that air stuck in between comes out. Pre- heat the oven for 10 minutes. For cup cake it takes 15 minutes for cake it take 35-40 minutes depending upon once oven.Once done take it out,shift to cooling rack .once cooled  garnish with toppings of your choice

Upside pineapple cake

My first Baking....it was in the year 2013On New years Eve.My sister suggested "you are doing well in the cooking and all Why dont you create a page in your facebook"  .within a day she created pages for me and i named it  Ammu'sVeg Goumet,There is No hype as the name suggest .Its just simple home cooking and I included some food which are always seen in restaurant.I will introduced it to you later.on Dec 31st  2012 evening my sister asked for a cake . she and my hubby love pineapple very much.I thought why dont we make an eggless pineapple cake i refered into nita mehtas book and got a recepie its The pineapple Upside down cake.We decided to make it for the new years eve.

Pineapple upside down cake.........finally baking cake

  1. Refined flour(maida)-250 gm
  2. Condensed milk -1 tin (400 ml)
  3. Butter – 125 gm
  4. Sugar – 6 tsp
  5. Pineapple slices – 10
  6. Club soda –    1 bottle
  7. Baking powder -1 tsp
  8. Baking soda – 1 tsp
  9. Salt  -a pinch of.
  10. Yellow food colour – 1/2 tsp
  11. Pineapple essence-  1/2 tsp
  12. Glazed or fresh cherry – 6
  13. Almonds-6-8 nos


  • PROCEDURE
  1. Take sugar in a nonstick pan and caramelize it on medium flame (cook, stirring constantly with a wooden spoon,until sugar dissolves and turn into a golden brown syrup like honey).
  2. Immediately remove from heat and pour in the baking dish to coat the base evenly.it may not cover the whole bottom now,but will melt and spread while cooking.
  3. Now arrange pineapple slices over it,and put cherry or walnut pieces in between the pineapple slices.
  4. Mix refined flour,salt, baking powder and baking soda and sieve twice.
  5. Take a mixing bowl and add melted butter(on room temperature),essence, colour and condensed milk and mix well.
  6. Chop 4 pineapple slices into small pieces and mix in the butter and milk mixture (A)
  7. Now add 2 tbls flour mixture in the mixture A,mix well
  8. Now add 2 tbls of soda water and mix it and keep repeating this process(step7 and 8)i.e-add some flour mixture then add some soda water then flour ,then soda water ,dont add all together. keep repeating untill you finished the flour mixture.
  9. Don’t mix the full can of soda water.you need approx. half can of drinking soda
  10. The mixture should be of dropping consistency (slightly thicker then the pakora batter)
  11. Bake in a preheated oven at 170 degree C  for 40-45 minutes.Place the cake in the center rack with both rod on.
  12. Check with a tooth pick insert it in the center, if cake is done perfectly then  it comes out clean .
  13. When done,remove from the oven and cool off  for 10 minutes.
  14. Run a sharp knife around the edges and then invert the cake onto your serving plate.
  15. Don’t allow the cake to be in the baking tin for more then 5-10 minutes,otherwise the caramel become hard again and the pineapple topping will stick to the pan .
